RECIPE ~ Walnut Butter


Walnut is an excellent nut containing protein, iron and essential fatty acids. Use this spread on toast, pancakes, or in cookie recipes! Makes 1 cup.

1 1/2 cups toasted walnuts*
1 Tbsp olive oil or as needed*
1 tsp raw honey or maple syrup*
pinch of salt*


To toast the walnuts, spread on a baking sheet and heat in a 200 degree oven for 5 minutes or until fragrant and lightly browned.

In a small food processor, place the walnuts and start the machine. In a slow and steady drizzle, pour in the olive oil. If after 1 tablespoon it isn't coming together, pour in 1 teaspoon at a time until it does. Stop the machine often to scrape down the sides. When it forms "butter", add the salt and sweetener then stop the machine.

Store in a sealed container and refrigerate for up to one month.

* FOR INDIVIDUAL DOSHAS
KAPHAS should avoid walnuts but this recipe is great using almonds instead; use sunflower oil; omit salt
PITTAS walnuts occasionally is fine, but almonds are better; use maple syrup instead of honey; omit salt

Claudia, I made this a couple of nights ago...it is sooooo good. thanks for the recipe.

I found I had to add 3 tbs of oil to get it to the right consistecy (just under 2 cups of walnuts - pre blend). Is this normal?

absolutely delicious, and a hit with the girlfriend.

Hello Greg! Thanks for the comment and I'm really glad you AND your beloved enjoyed it. I think the 3 Tbsp oil for 2 cups of walnuts is normal. Sometimes it depends on how good the food processor is, so that it might only need 1 Tbsp, but heck, if you choose to use walnut oil, it wouldn't make a difference! : )

Claudia, do we need to soak the nuts first? Heard that soaking makes the nuts more digestible.

Hi JK, I believe only almonds need soaking for better digestibility (especially for Pittas and Kaphas), but the rest are soft enough as-is. Just a note that raw nuts and seeds are much healthier than roasted, but in the case of this nut butter, a quick toasting will bring out the flavours without destroying the natural enzymes in the walnuts.

Yes, it was me who requested to join the Recipe Club - simply love your recipes as they differentiate the different doshas.

Tks for the response on the walnut butter. As I am predominantly a pitta, it seems almonds may be better for me. In this case, I should first soak, then toast the almonds as suggested in the recipe for 5 minutes?

Is the olive oil suggested = extra virgin or just olive oil.

Can we also use grapeseed oil instead.

Hello JK!

If you use almonds, and you'll be soaking them (definitely recommended for Pittas), do not toast them. It will not taste like your conventional almond butter which uses roasted almonds, but will have a lighter taste that better suits your constitution than conventional almond butter.

Yes, extra virgin olive oil, cold pressed, is always best. You can also use grapeseed oil (will also help preserve the almond butter for longer as it is a natural preservative), as well as coconut oil, though it has a strong flavour.

To Anonymous in the Bahamas, use coconut oil instead of olive oil (will be delicious!), and a liquid sweetener available to you (honey?). Hope this helps!
