RECIPE ~ Summertime Corn Salad

This is a fresh but hearty salad that's a satisfying late-summer dish. Excellent for Pittas and Kaphas!

1 sweet potato, peeled and diced
2 white potatoes, diced
1 bag frozen corn (or fresh boiled equivalent)
1/2 red onion, thinly sliced
2 cloves garlic, thinly sliced
1 can butter (lima) beans
4 Tbsp olive oil
juice of 4 limes
1/2 cup coriander leaves
2 Tbsp fresh rosemary (or 2 tsp dried)
sea salt and fresh pepper to taste


Boil the potatoes in a large pot, adding the corn in the last few minutes to thaw and soften. Drain well and return to the pot. Add the remaining ingredients and stir gently to combine. Transfer to a serving dish. Easy peasy! Makes lots.

* FOR INDIVIDUAL DOSHAS
VATAS this recipe's not so good for Vatas, so for something completely different try replacing corn with quinoa, white potatoes with sweet potatoes, and lima beans with lentils; saute onions before using.
PITTAS a great Pitta recipe! Just omit onion, garlic and pepper.
KAPHAS a great Kapha recipe! Use only white potatoes and reduce oil and salt.
